Also opened in 1908, Phillipe’s is the second restaurant to claim ownership of the French Dip. Owner Philippe Mathieu claims that the sandwich was invented in 1918 when he accidentally dropped the roll into a vat of hot jus and the customer said he didn’t care. The name of the sandwich was coined because of the dipping into the jus and because of Mathieu’s French heritage—although another telling of its history claims the customer was French. As gold became more and more difficult to reach, the growing industrialization of mining drove more and more miners from independence into wage labor. The new technique of hydraulic mining, developed in 1853, brought enormous profits but destroyed much of the region’s landscape. By mid-June, shops and businesses stood empty, as some three-quarters of the male population of San Francisco had abandoned the city for the gold mines, and the number of miners in the area ballooned to some 4,000 by August.

We’ve visited these spots time and again — they have to be open for at least six months before they merit inclusion — and we update the list quarterly to keep things fresh. Nickel Diner is found on an old stretch of Main Street in Downtown Los Angeles, in a space dating to the 1940s – a site of a long-forgotten diner that opened in the mid-20th century and then abandoned until it was reopened in 2008. During remodeling, original hand-painted wall menus were uncovered, advertising 1940s prices, such as 25-cent hamburgers and 19-cent hotdogs. Although you won’t find those prices today, you will find authentic 1940s wallpaper, floor tiles, welcoming red booths and indulgent maple-bacon donuts – a sentimental nod to the American diner of the 1940s and ’50s. For something a little less sweet, try the grilled flatiron steak with a wedge of iceberg lettuce drizzled with blue-cheese dressing, or a stack of fried catfish with corn pancakes. Enter the archway of this 1924 arcade-style shopping center and you’ll find a glass-roofed alleyway dotted with restaurants and shops.

Blanche and George March opened El Coyote in 1931 and they chose the name because the word is the same in English and Spanish. Mexico, South America, and the Sandwich Islands, furnished their quota; Australia, the gold-fields of which were then undiscovered, sent its adventurers, and China spared large numbers from its dense population. The wealth of the mines was poured into these towns, and with their rapid growth they assumed a more substantial appearance. Thither came the successful gold- hunters to purchase supplies and spend their quickly found treasure, and thither came ships from all quarters of the world with more immigrants and more supplies. More advantageously situated than the old Californian towns for this new commerce, San Francisco, from a collection of tents and shanties, quickly grew to a more permanent and substantial condition, with a population and trade increasing with marvelous rapidity. The large caravans were too formidable for the savages to venture an attack, but smaller companies, following the trail of the larger, or stragglers who imprudently tarried in the rear, did not always escape.
There’s great sushi almost anywhere in America, but from top to bottom, it’s hard to argue that the incredible quality — and tradition — of Los Angeles’s sushi is unmatched.
